British Wagyu Fillet Steak with Parmentier Potatoes, Watercress Salad, and a Salt & Pepper Butter

Ingredients
  • 4 x British Wagyu Fillet Steaks
  • 1kg Maris Piper Potatoes
  • 4 x Garlic Cloves (Crushed)
  • Thyme
  • 80g Watercress
  • 2 tbsp Red Wine Vinegar
  • 6 tbsp Olive Oil
  • 1 tsp Dijon Mustard
  • 100g Unsalted Butter
  • Sea Salt
  • Cracked Black Pepper
Method
  1. To make the salt & pepper butter, season softened butter with sea salt & cracked black pepper.
  2. Lay a piece of baking paper flat on a kitchen work surface and put the softened butter into the middle of the baking paper in the form of a log. Roll and wrap tightly to form a cylindrical shape.
  3. Chill in the fridge for a couple of hours (or overnight) before using.
  4. For the parmentier potatoes, peel the potatoes and cut into cubes approximately 2cm x 2cm.
  5. Wash well and place in a pan of salted boiling water for approximately 5 minutes until part cooked.
  6. Drain and allow to steam dry for 15 minutes.
  7. Preheat Oven to 180C, place the part cooked potatoes in a roasting tray and add the crushed garlic cloves and thyme springs. Drizzle with olive oil and season well with sea salt & cracked black pepper, toss well to coat.
  8. Place in the oven for 30-35 minutes occasionally turning until golden brown.
  9. For the watercress salad, wash the watercress and place into a large bowl. In a separate bowl make a Mustard Vinaigrette Dressing by adding the mustard, red wine vinegar and olive oil. Season with sea salt & cracked black pepper and mix (or ideally whisk) well to bring them all together.
  10. Add the dressing to the washed watercress and toss lightly.
  11. Pan fry the steaks as desired (Rare 8-10 minutes; Medium 10-12 minutes; Well Done 12-16 minutes) and allow to rest for 5 minutes before serving.
  12. Whilst steaks are resting, remove butter from fridge, slice into circular portions and gently warm though in the pan used to cook steaks.
  13. Pour butter over steaks and serve

Tip – Why not experiment with different flavoured butters. If you like a bit of heat, add some Chipotle paste or if you like a classic flavour pairing, add some grated / minced garlic
